OLM is Outlook for Mac's native exchange format. Contacts import with their images and categories intact, into the local "On My Computer" section in Outlook.
Outlook contacts are less flexible than macOS contacts. Rather than dropping fields Outlook doesn't support, the app can add them to the contact's notes – so nothing is silently lost.
For Outlook on Windows or the Microsoft 365 web app, export the Outlook for Windows CSV. The same format is accepted by many other online services and apps too.
